I had this for my first Attack lunch yesterday. Simple and delicious! Why have chicken salad OR egg salad…when you can have both at the same time!! So far, so good. Attack is going swimmingly! And today…I made a wrap with it with thinly sliced turkey breast lunch meat!
WHICH CAME FIRST CHICKEN AND EGG SALAD
2 cups rotisseried chicken breast, cubed
4 hard-boiled eggs (I removed two of the yolks), chopped
3 T fat free or Dukan mayonnaise
1 green onion, chopped
salt and pepper
Stir together all ingredients in a large bowl and season with salt, pepper and paprika. Serve in lettuce cups or simply by itself!
