Vindaloo Chicken Legs
This chicken is fabulous. You can get the Vindaloo spice online from Penzeys.com or you can make the recipe at the bottom. But it’s a lot easier to get it from Penzeys!! Either way, this is a perfect recipe for a PV day. I tore the chicken off the bone when it was all done and mixed it all together with the cabbage. It was delish! Vindaloo can be spicy so if you don’t like a lot of spice, try 2 tablespoons first. 3 is medium i would say. I may try 4 next time!!
VINDALOO CHICKEN LEGS
4 skinless pieces of chicken
1 bag of shredded cabbage
1 onion, sliced
3 T Penzey’s Vindaloo Spice mixed with 3 T water
1 cup water
6 T white vinegar
In a large Dutch oven, brown all sides of the chicken, remove from pot and set aside. Add onion and saute for 5 minutes. Add chicken back to the pot, stir in the Vindaloo paste, water and vinegar. Mix well. Add the cabbage on top of the chicken, cover and simmer for 45 minutes to an hour, stirring occasionally.
1. Cumin powder: 10 teaspoon
2. Coriander powder: 8 teaspoon
3. Turmeric powder: 2 teaspoon
4. Fenugreek powder: 2 teaspoon
5. Dried Ginger powder: 2 teaspoon
6. Cinnamon powder: 1 Tablespoon
7. Ground Cloves: 1 Tablespoon
8. Ground Black pepper: 1 Tablespoon
9. Ground Cardamom: 1 Tablespoon
10. Hot Cayenne Pepper powder: 8 teaspoon
11. Hot mustard powder: 4 teaspoon
