Vicki’s Zucchini-Basil Crockpot Soup
I actually didn’t cook my soup in the crockpot. I just put all the ingredients into a pot and simmered it for about an hour. Then I pureed it with a hand blender and boy was it delicious! Thanks Vicki, for entering the Crockpot Contest! Hope you enter the new ground turkey contest!!
VICKI’S ZUCCHINI-BASIL SOUP
2 pounds zucchini, trimmed and cut
1/2 pound lean shoulder bacon
3/4 cup chopped onion (red or white)
1 tsp red crushed pepper
1 tsp coriander
1 tsp white pepper
1 t olive oil
4 cups low sodium chicken broth
1/3 cup packed basil leaves
Throw everything into the crock pot and simmer for a few hours on low. Puree with a Braun hand blender right in the crock pot. Serve with 1 Tb of nonfat sour cream.
I garnished my leftover soup with a little chopped fresh jalapeno, a tablespoon of nonfat sour cream and a tablespoon of 2% cheddar cheese. It was phenomenal!!

Just wondering what precludes this from PPV Attack phase? It looks yummy!
no vegetables on attack. it was good though!! as soon as you get to cruise you can have it on pv days
I tried this recipe and it is extremely peppery/hot. Is it suppose to be or maybe I did something wrong.
a teaspoon is a good amount of red pepper flakes so maybe you should cut it in half. sometimes it depends on how fresh your pepper flakes are too.
