Butternut Squash Soup
And here is one of the last entries in the crockpot recipe contest. Very sweet and delicious, butternet squash soup is a must this fall. I didn’t cook mine in a crockpot, I didn’t have the time but you certainly can turn it on in the morning and not look at it again after you get home from work. Either way, it was delicious, thank you Vicki!
VICKI’S BUTTERNUT SQUASH CROCKPOT SOUP
2 pounds butternut squash, trimmed and cut
1 turkey sausage, casings removed and browned
3/4 cup chopped onion (red or white)
1 tsp red crushed pepper
1 tsp coriander
1 tsp white pepper
1 t olive oil
4 cups low sodium chicken broth
Throw everything into the crock pot and simmer for a few hours on low. Puree with a Braun hand blender right in the crock pot. Serve with 1 tablespoon of nonfat sour cream.
I actually cooked this right on the stove top and it was done in a half an hour. you can either let it cook slowly or have it done quite quickly. Enjoy!

Do you think I can make this with acorn squash?
when i looked up acorn, which is hard to find dukan’s written answer on this one, i saw that it had more sugar which made it then have more carbs. i think someone said that on his site, he says no. i’ve had a hard time finding that. with all that said…i would, and have had, acorn squash. i lOVE it! i wouldn’t eat it every day, like i wouldn’t eat carrots every day, but i wouldn’t have a problem with it. it’s one of those, you have to choose for yourself, kinda decisions. i made choices like that all through cruise. that’s what made it work for me. i didn’t feel deprived, i chose my foods wisely and what i was going to cheat with. (i ate lowfat cheese through the entire cruise phase too!) good luck!!
I agree Janice. I have eaten more oat bran than the stated amount all through Cruise. I also made your acorn chips. They were superb with splenda and cinnammon too! I have quite a few acorn squash here that my brother-in-law gave me, so gonna eat them up.
