TURKEY TACO SALAD WITH MARINATED CARROTS
6-8 carrots, cleaned and cut on the diagonal into 1/4-inch slices
1 jar marinated jalapenos
1 T adobo sauce from a can of chipotle peppers
Mix all ingredients together and let set overnight. They’re good in a couple hours but even better if they get to marinate overnight.
1 lb ground turkey
1 15 oz can mexican-style diced tomatoes
1 chipotle pepper, finely chopped with adobo sauce
2 plum tomatoes, chopped
1/2 bag shredded iceberg lettuce
1/4 cup fat free cheddar, shredded
fat free sour cream
Brown the turkey in a skillet. Drain well. Add the tomatoes and pepper and bring back to a simmer, cooking long enough to get rid of most of the liquid, about 8-10 minutes. Serve meat warm over lettuce and top with tomatoes, cheese and sour cream. Serve with marinated carrots.
