Dinner is ready! This was an incredibly flavorful dish. You can leave the peppers and zucchini out and have it on a pure protein day. But today I was craving a few more veggies than normal so I went for it. I’ve got another variation already planned for tomorrow night! Stay tuned…
TURKEY TACO PIE
1 1/4 lb ground taco seasoned turkey
1/2 small red onion, diced
1/2 red bell pepper, diced
1 jalapeno, seeded and diced
1 small zucchini, diced (Consolidation only)
2-4 chipotle peppers and 2 t adobo sauce
3/4 cup egg whites
3 T fat free cream cheese
2 t fat free greek yogurt
1/4 cup 2% (Cons) or fat free sharp cheddar, shredded
1/4 cup cilantro, chopped
1/4 cup fat free sour cream
Brown pepper, jalapeno and onion in skillet, cook for 5 minutes and add zucchini in the last minute. Add turkey and chipotles and cook another 5 minutes. Drain meat mixture and pour into a casserole dish. Stir in the adobo sauce and season with salt and pepper. Whisk together eggs, cheese and yogurt until smooth and pour over meat mixture. Sprinkle with cheddar. Bake for 20 mins at 350.
Garnish with cilantro and fat free sour cream.
