Delicious. This was dinner last night. So simple and quick. I did mine on the rotisserie but you can throw them in a grill pan or on the grill too. I should’ve made more. For sure.
THAI SWEET AND SPICY SHRIMP SKEWERS
1/2 cup water
1/2 cup zero calorie brown sugar
1/4 cup white vinegar
1/2 t cornstarch mixed with 1 t water
1-2 t chili paste
2 T lime juice
1 T fish sauce
1/4 cup fresh cilantro, chopped
8-10 large shrimp, peeled and deveined, tails left on (mine were about 13/lb size)
Mix the water, sugar and vinegar over low heat in a small pan. Once the sugar has dissolved, add the cornstarch mixture and cook about 1-2 minutes or until sauce thickens. Remove from heat, let set 3 minutes, and add the rest of the sauce ingredients. Place 4-5 shrimp on a skewer for either the grill, grill pan or rotisserie. These will take about 15 minutes on the rotisserie, depending how large the shrimp are, maybe only 2-3 minutes per side on a hot grill. Continually brush sauce on the shrimp as they are cooking, reserving half of the sauce for dipping. You may even have enough to make them again if you set enough aside.
