Karen from Facebook asked me to make a tequila-lime wing and here it is. Since I know that not everyone on the Dukan is at the stage where they’re ready for wings I cooked thighs in the sauce, as well. I may save a few thighs and chop them up for scrambled egg whites in the morning. The sauce all over them would be wonderful!
TEQUILA-LIME CHICKEN WINGS AND THIGHS
1/2 cup lime juice
1/4 cup tequila
1 T agave syrup or 1 t Splenda
1 t lime zest
1 t ground cumin
1/2 serrano chili, finely diced
3 lbs of skinless chicken wings, thighs, or combination of both
1 t cornstarch
Season the chicken with salt and pepper and bake at 450 for 30 minutes. Mix all the sauce ingredients in a bowl and pour the sauce over the chicken and bake for an additional 30 minutes, constantly basting. Drain the sauce into a saucepan and add the cornstarch. Cook for 5 minutes, until thick. Pour over chicken and serve.
