This sauce is incredibly tasty and really interesting. My mom says “It’s tangy and spicy and definitely has that barbecue-thing” and jlo says i think you all should definitely try it. I just took Dino and Frankie out for a walk and could smell the place about a half block away. Mmmmmmmm. I served it with a bit of steamed frozen okra. A real southern meal.
SWEET AND SPICY ROOT BEER PORK
1 can diet root beer
4 oz tomato paste whisked with 4 oz water
1/4 cup rice wine vinegar
2 t Splenda or 2 T molasses or honey or brown sugar blend Splenda
2 T Worcestershire sauce
2 garlic cloves, crushed
1/4 cup onion, finely chopped
1 t hot paprika
1/4 t ginger
1 t Tapatio or your favorite hot sauce
1 T cornstarch
salt and pepper
1 pork tenderloin, cut into 1/2-inch rounds or 1 rack baby back pork ribs (Consolidation cheat meal or Stabilization)
Place pork in a dish with about 1 inch of water. Season meat with salt and pepper. Cover tightly with foil and steam for 1 hour at 375. While steaming pork, mix the rest of the ingredients in a saucepan and bring to a boil. Simmer for 15 minutes. Season with salt and pepper. After an hour remove foil, drain the water from the ribs, pour sauce over pork, and continue to bake uncovered for an additional 45 minutes, continually basting.
