Sweet and Spicy Bacon Chicken with Black Rice

The rice is for Consolidation and Stabilization but I want to start introducing healthy side-dishes for those who have moved forward in the diet. It’s important if you’re going to add carbs back, to make them the best ones you can have!! I used a wonderful black rice from China. Mmmmmm. Perfect PP dish without the rice.
Sweet and Spicy Bacon Chicken
4 chicken breasts cut in thirds (12 pieces) (I used 4 skinless bone-in chicken thighs)
Bacon slices (I used 8 turkey bacon)
salt and pepper to taste
garlic powder
chili powder (I used ancho chili powder and regular)
brown sugar (I used zero calorie brown sugar)
smoked Spanish paprika
Season all the chicken with the spices, then wrap a bacon slice (I used 2) around each piece, roll in brown sugar and place into an oven proof dish….make sure you have some olive oil in the dish too, like 2 or 3 tablespoons is fine {I skipped this since I grilled them. I honestly think you could coat your dish with nonstick cooking spray instead to save a few calories}.
Bake at 400 degrees for 30 to 40 minutes or until chicken is cooked through and bacon is nice and brown and crispy. (I used my rotisserie and cooked for 45 minutes. Fabulous!!)
**Also great on the grill! No juices to drizzle on anything, but still delicious!
BLACK RICE
1 cup black rice
1 3/4 cup water
1/2 medium onion, chopped
2 cloves garlic, minced
1/2 jalapeno, chopped
pinch of salt
Brown onion, garlic and jalapeno for 5 minutes. Season water with salt and add to the pot with the rice. Cook, covered, for 30 minutes. Let stand 5 minutes and fluff with a fork before serving!!










I made this recipe tonight. The chicken was incredible. The brown sugar makes the bacon taste like ham. I used real bacon – center cut, as turkey bacon is higher in sodium. I will definitely make this again. Thank you.
