Sweet and Sour Roasted Tofu
Inspired by a reader on Facebook, here is my version of sweet and sour tofu. And it was delicious. I have never baked tofu and it changed the texture so much that I would’ve thought it to be a meat dish. This was fabulous! Thanks for sharing!!
SWEET AND SOUR ROASTED TOFU
1 block firm tofu, liquid pressed out and cut into cubes
1 onion (large slices)
1 red bell pepper, sliced
2 green onions, cut into 2-inch pieces
1/2 15 oz can tomato sauce
1 T zero calorie brown sugar
2 T red wine vinegar
Spray all sides of the tofu cubes with cooking spray. Bake on a cookie sheet for 1 hour at 375. They should be nice and brown. Set aside. Meanwhile, in a pan or wok sprayed with cooking spray, fry up the onion and peppers. When everything is cooked but not overcooked, add the tomato sauce, brown sugar and vinegar. Adjust to your taste. I also added a bit of red pepper flakes. Once the sauce is seasoned to taste, add the tofu and stir fry for about 2-3 minutes or until tofu is hot again.
