So I learned today that true vegetarians, ones that are not eating meat on this diet, can eat 2 tablespoons of lentils on their pure protein days and as many as they wish on protein vegetable days. Good news for you! Consolidation Phase-ers can have 8 ounces daily. BUT, if you’re not a vegetarian or in Consolidation, please don’t eat lentils. They will not help you lose weight! I love lentils and this is my MOST FAVORITE recipe ever. Hope you enjoy!
SWEET AND SOUR LENTILS
1 cup of lentils
3 cups of water
1/4 cup cider vinegar
2 t Splenda or 4 T honey (Consolidation)
1/2 bunch of cilantro, chopped
1/2 jalapeno, seeded and chopped
1/2 small onion, chopped
Sauté the onion with the jalapeno in a bit of cooking spray. Once softened, add the cider vinegar and honey and cook for 5 minutes. Take off heat and add cilantro. Meanwhile, simmer the lentils in water for desired amount of time. The shorter the time, the more al dente, but cook for at least 20 minutes. Different lentils will also vary in cooking time. Don’t salt the lentils until they are done cooking. Once the lentils are tender, season with salt and pepper and add the sautéed vegetables.
