“Surprise” Meatloaf Meatballs
Wondering what to do with all those leftover Easter eggs this weekend? Here’s an idea…Tom LOVED them!! Happy Easter and Passover, everyone!! Skip the tomato sauce if you’re not in Cruise yet! They’re still delicious.
“SURPRISE” MEATLOAF MEATBALLS
1 lb ground sirloin
1/4 cup egg whites or 1 egg
1/4 cup oat bran
1 T tomato paste
1/2 cup low or fat free cottage cheese
1 T Worcestershire sauce
1/4 t garlic powder
1 T dried minced onion
8 hard-boiled eggs, peeled
1/2 cup tomato sauce
Season tomato sauce with salt and pepper and set aside. Mix all ingredients, down to the eggs, with hands, careful not to handle too much. Divide mixture into 8 sections. Flat each section in the palm of your hand and wrap around each egg, careful to seal. Cover each meatball with a bit of tomato sauce. Bake meatballs at 375 for 25 minutes.

so sorry i missed my comments!! i just decided to look and i have a bunch. oh my, i was surprised while i was gone that so many people were still reading so i decided to keep posting! so thank you to you!! thanks for the kind words–it’s why i keep posting, because of nice people like you. i’m writing a meatball cookbook because i think meatballs are the greatest way to get through the diet. there will be 99 to choose from!!
