This was so easy and so delicious! I had them in the oven in less than 30 minutes. Hope you can find the right chilis because they are really mild and super flavorful!
1/2 lb ground turkey
2 t taco seasoning
2 pasilla chilis
1/4 cup low or fat free cheddar, shredded or one lowfat string cheese, chopped small
Brown the meat in a pan. Once the meat is browned, add 1/4 cup water and the seasoning and simmer for 10-15 minutes or until all the water has been absorbed.
Cut the top, lengthwise, off the top of the chilis, leaving the stem on the bottom half. Remove the seeds and the ribs of the inside of the chilis. Remember, the seeds may be hot so don’t touch your face with your hands after you do this step!
Stuff the chilis with half the cheese and then half the meat. Place the the top back on the chili, spray with a bit of cooking spray and place on a foil-lined cookie sheet, sprayed with a bit of cooking spray. Roast them at 425 for 20-25 minutes. Enjoy!
