This was lunch today! I stayed home from work today to decorate some cookies I’m making for my parents’ big 50th wedding celebration we’re having in Palm Springs this weekend. I will post pictures from it after the event. Even though it doesn’t have anything to do with dieting, believe me, I’ll still be following mine closely. Anyway, I used a lowfat chicken sausage I found at Trader Joe’s today and stuffed a chicken breast with it. It was delicious! Enjoy!
STUFFED CHICKEN BREASTS WITH CHICKEN SAUSAGE AND BREADCRUMBS
1 lowfat chicken sausages (any flavor), casings removed
1 shallot, finely chopped
2 tablespoons finely chopped celery
1/4 cup white wine (Consolidation ONLY-leave out if not)
1/4 cup oat bran
1 garlic clove, finely chopped
1 tablespoon fresh parsley, finely chopped
2 boneless, skinless chicken breasts pounded to 1/4-inch
olive oil spray
1/2 cup chicken broth
Cook sausage (if sausage is precooked, crumble and heat with), onion, garlic and celery in a skillet for 5 minutes. Add wine and cook until almost all absorbed. Add oat bran and parsley. Roll half the stuffing mix into each chicken breast and season outside with salt and pepper. Spray chicken with cooking spray and cook 3 minutes on each side. Add chicken broth, scraping pan. Cover and reduce heat, and simmer for 7-10 minutes or until the chicken is fully cooked.
