A suggestion from someone on Facebook: What about just stewing some rhubarb with sweetener, then having that over a galette that’s made with sweetener and some vanilla. Top that with a dab of sweetened Greek yogurt with a pinch of cinnamon…Yum!
2 large stalk of rhubarb, cut into 1-inch pieces
1 1/2 cups water
4-5 t zero calorie brown sugar, or to taste (I like mine kind of tart)
Simmer all ingredients in a saucepan over medium heat for about 10-15 minutes. If it appears too liquids, you can drain some of the water. Let cool and serve over an oat bran crepe and a dollop of sweetened Greek yogurt.
I found a yogurt shop near me that has sugar and fat free vanilla yogurt. I had mine over that! It was fabulous!!
