This recipe can be adapted to Attack, Cruise (Pure Protein or Protein Vegetable) or any stage beyond that. The meat itself is delicious with nothing else or some hot sauce for a Pure Protein day. Add the salsa, onions and bell peppers and sour cream and you have a Protein Vegetable meal. At any stage, I recommend this dish. Obviously you can substitute chicken in this recipe, along with shrimp or any other fish you like.
1/3 cup soy sauce
1/2 cup chopped cilantro
5 green onions, rough chopped
1/4 cup fresh lime juice
1/2 t ancho chili powder
1/2 t smoked paprika
2 T Brown Sugar Blend Splenda or 1 1/2 t Splenda
2 lbs sirloin steak, cut against the grain into strips
1 white onion, sliced
1 red bell pepper, sliced
salt and pepper
iceberg lettuce leaves
fat free sour cream
Puree the first 7 ingredients in a food processor. Pour mixture into a baggie and add the steak, onions and bell pepper. Marinated for an hour. Remove the strips of meat from the marinade, reserve the marinade, and pat the meat dry with paper towels. Throw vegetables on the grill or a hot grill pan and a few tablespoons of the marinade and cook for 5 minutes. Add the meat to the grill and cook for 2 minutes per side, or until desired doneness. Serve meat and vegetables in lettuce cups or corn tortillas and top with pico de gallo and sour cream.
PICO DE GALLO
6 plum tomatoes, seeded and chopped
1/2 cup white onion, finely chopped
1/2-1 jalapeno, seeded and finely chopped
1/4 cup cilantro, chopped
1 T fresh lime juice
1/2 t garlic powder
salt and pepper
Mix all ingredients together and refrigerate til ready to use.
