A little sweet, a lot of earthy, this salad was a dream last night. Then there was the warm dressing on the cold salad. with chilled eggs. Mmmmmmm. I’ve included the nutritional information on the bacon bits because it’s a lot less than cooking bacon yourself and it’s just as delicious. I even think it has less fat than some turkey bacons!
SPINACH SALAD WITH WARM BACON DRESSING
1/2 small red onion, thinly sliced
8 mushrooms, thickly sliced
1/4 cup Real Bacon Bits
4 hard boiled eggs, sliced
1/4 cup fat free cheddar, shredded (optional)
1/4 cup cider vinegar
1 t zero calorie brown sugar
8 oz spinach, rough chopped
Divide the spinach between 2 plates. Saute onion in a bit of cooking spray for 2 minutes. Add the mushrooms and continue cooking for another 2 minutes. Add the bacon and cook for another minute. Add the cider vingar and deglaze the pan for a minute, adding the brown sugar finally. Cook for 2 minutes, stirring frequently. Serve warm salad over spinach and top with cheese, if using. Finish with fresh ground pepper.
