Smoked Spanish Paprika Chicken
I’m really trying to show you how to make dishes that can be for the entire family. Whether it’s a PP or PV day or depending on what stage you are in, will tell you what part of the recipe you can have. Obviously, the chicken is perfect PP, the spinach is PV and the couscous is for moving on into Stabilization. Or just something you can add to the dish for the rest of the family. I hope you can work these dishes into your routine!!
SMOKED SPANISH PAPRIKA CHICKEN
2 T smoked Spanish paprika
1 T zero calorie brown sugar
1 T chili powder
1/2 t garlic powder
1 t kosher salt
6 chicken pieces, on the bone, with or without the skin (I remove mine after baking)
Mix all the spices together in a small bowl. You may have extra you can keep in an airtight container for another time. Smother the chicken in the rub and bake at 400 for 35 minutes.
I served my chicken over frozen spinach that I thawed and pressed dry. Then I added a bit of the spice mixture from above and some fat free plain Greek yogurt. Then I added a few tablespoons of whole wheat couscous. This would be for those who are in Stabilization already. But it was just as delicious without the couscous!! And a little extra yogurt on the side was delicious with the chicken!!
