Seriously, it really doesn’t get any easier than this. Salt pepper, a few other ingredients, and a chicken. And a beautifully roasted one, in a little over an hour.
SIMPLE ROAST CHICKEN
3 lb chicken, washed and patted dry with paper towels
salt and pepper
1 lemon, quartered and cut in half
1 small onion, quartered
2 t fresh thyme
Preheat oven to 400. Fill body of the chicken with onions and lemon. Generously season the outside of the chicken with salt and pepper. Sprinkle with thyme. Roast chicken for about an hour, or until internal temperature reaches 165.
