Shrimp with Chipotle Tomatillo Salsa
If it’s not a PV day for you, skip the salsa and let the rest of the family enjoy! Try to find fresh shrimp if you can, it’s delicious now and really beats the frozen stuff!!
SHRIMP WITH CHIPOTLE TOMATILLO SALSA
Tomatillo Salsa:
1 T zero calorie brown sugar
2 T fresh lime juice
2 T cider vinegar
1 t lemon juice
2 T shallots, finely chopped
1 chipotle pepper and 1 T adobo sauce, chopped
1 tomatillo, finely chopped
Shrimp:
1 dozen large, shrimp
1 T fresh lime juice
1 clove garlic, minced
cooking spray
Season the shrimp with salt and pepper, add the lime juice and garlic and give the shrimp a good spray of cooking spray. Place in refrigerator for 15 minutes. Prepare your salsa by adding all the ingredients together in a small bowl. Set aside to serve with shrimp. I cooked my shrimp with all the juices that they were marinating in, in a cast iron skillet over high heat for about 5 minutes but you can grill them, broil them or put them in a grill pan. Do not overcook. Serve with salsa.
