Shrimp and Pork Meatballs with Dipping Sauce
Oh my god, I just made these for lunch and they were fabulous. They are a must try. The pork i found is 95% fat free Extra Lean Farmer John Ground Pork. They were absolutely yummy! They tasted like the inside of a potsticker!
SHRIMP AND PORK MEATBALLS WITH DIPPING SAUCE
1/4 lb extra lean ground pork
1/2 pound shrimp, deveined, peeled and finely chopped
2 T oat bran
1 egg white
1 green onion, finely chopped
3 oz water chestnuts, finely chopped
2 T cilantro, chopped
1/2 t salt
1/4 t red pepper flakes
olive oil spray
Mix all ingredients together and form 12 meatballs. Brown all sites in a skillet with a bit of olive oil spray. Once browned, add 1/4 cup water, cover, and steam for 3-5 minutes or until they are fully cooked. Serve with sauce.
DIPPING SAUCE
1/4 cup unseasoned rice wine vinegar
1 green onion, finely chopped
1/2 t red chili paste or red pepper flakes
2 t splenda
1 T lime juice
1 t soy sauce
Mix all ingredients together and serve with meatballs.

Do you think ground chicken would work in place of the ground pork. I can’t find lean ground pork, lol.
yes, ground turkey would work too. so would ground sirloin. they’re really good!
Bravo, wonderful recipe! It closely resembles the filling for wontons I normally make. The dipping sauce intrigued me so I simply had to try it, I tweaked a few ingredients as well – substituted water chestnuts with diced, shiitake mushrooms, no green onions but more cilantro. I had already had my oat bran intake of the day so I left it out, I found the egg white held it well enough. It’s quickly becoming one of my favourite recipes on PV days, the dipping sauce is absolutely divine, thank you for sharing!
it could use a big of ginger too. but i didn’t have any!! glad you like them!

These sound wonderful! Does this count as Pure Protein or does the green onion push into PV?
you can cook with onion and green onion and garlic and it still be pure protein. you’re all good on a PP day!

I made these for dinner last night, and they were so delicious! I had my son try them (he is a huge foodie) and he loved them! He said that they didn’t taste like “diet food” but the real thing. I did add fresh ginger to these and it was a great addition. Needless to say I will be making these again very soon.
they are definitely not diet food. they’re fabulous. this diet is just choosing the right foods in all food groups. it’s not saying you can’t have anything, just some things in moderation at first, and then just choosing the correct ones later. glad you liked them. thanks for all your positive feedback and inside tips!
I am going to make a large amount of these for a baby shower next week and want to do them ahead. Since you have made them before how do you think I should handle the reheating? Should I reheat in the oven, covered on top of the stove or could I use a crock pot? I assume I should keep them in some sort of shrimp or vegetable broth. Any ideas?
hmmm. is there a way you could just steam them? i wouldn’t keep them in any broth then. just resteam them when you’re ready to serve.

they are probably my favorite dish on the website. the dipping sauce, mmmmm. glad you like them!! when you get to stabilization you can wrap the filling in a wonton wrapper!
