Shrimp and Cucumber Salad
I didn’t even realize that I liked shrimp until I had this salad. And boy, is it easy to make. On days when Dukan lets you have vegetables, this is a go-to favorite of mine. And it takes about 5 minutes to assemble and 10 minutes to marinate. Here it is, in its simplicity…
SHRIMP AND CUCUMBER SALAD RECIPE
1/2 large English cucumber, peeled, sliced and quartered
1 lb cooked jumbo shrimp, tails removed, cut into 1/2-inch pieces
1/4 cup unseasoned rice wine vinegar
dash of soy sauce
1 T minced fresh chives
1 t finely diced jalapeno, seeded (optional)
Toss all ingredients together and season with pepper. Let marinade for at least 10 minutes in the refrigerator. Serve cold.
Serves 4 as a side dish, or 2 as an entree salad
