This traditional French salad is almost perfect for this diet, minus the potatoes and olives. But this is pretty close to perfect! It is the perfect Protein Vegetable recipe. I haven’t had a lot of salads on the diet and this one was full of protein and fresh vegetables. Enjoy!
1 head butter leaf lettuce
1 lb green beans, blanched
4 tomatoes, cut into wedges
Two 3-ounce cans chunk tuna or 6 pieces of sushi-grade fresh tuna
4 hard-boiled eggs, peeled and sliced
1/2 can of flat anchovy fillets
3 T capers
3 T fresh parsley, chopped
a few nicoise olives (optional)
1 large shallot, minced
1/4 cup red wine vinegar
2 t olive oil
Arrange the lettuce on a large platter. Shortly before serving, toss the beans and tomatoes with the shallots, vinegar and olive, and salt and pepper. Place the anchovies, green beans, tuna on the lettuce and scatter on olives, capers, and parsley, and serve. Ring the platter with the eggs and drizzle extra vinegar and shallots on top of the lettuce.
