Friday Favorites is back! I have a lot of recipes that I think were posted over a year ago and are being missed by new readers. So, I have decided to feature an older recipe on Fridays for those of you who missed it the first time! I didn’t eat much pork tenderloin before this diet and after I found that some of these recipes were so easy and delicious I started eating it a lot more often. Hope everyone has a great weekend!
Dinner was ready in 15 minutes. And on a Friday night, that is awesome. So incredibly flavorful and nice lean white meat. A perfect dinner for a pure protein day! Enjoy your Friday night, everyone!
PORK TENDERLOIN IN MUSTARD WINE SAUCE
1 pork tenderloin, cut crosswise into 1-inch slices
3/4 cup low sodium chicken broth
1/4 cup dry white wine
3 T whole-grain Dijon mustard
2 T warm water
2 t corn starch
salt and pepper
2 T fresh parsley, chopped
olive oil spray
Season pork with salt and pepper and cook in skillet for 5 minutes, turning once. Pour the broth, wine and mustard into the skillet, bring to simmer and cook, covered, for10 minutes. Remove pork from pan and cover with foil on a plate to keep warm. Mix the warm water and corn starch together and pour into the pan. Bring sauce to a boil and simmer for 2 minutes, or until thickened. Pour sauce over pork and garnish with fresh parsley.
