Back to a pure protein day for me today. Too much fun in Houston. And I have to say I feel so much better today. Feel at home eating healthy, you know? Anyway, I have lots of parsley and basil in the garden and I also had some tiny French shallots growing. So I chopped it all up with a bunch of garlic and make some tasty meatballs. Try them, they were super tasty.
PESTO TURKEY MEATBALLS
1 1/4 lb ground turkey
4 large cloves of garlic, chopped
1 t French shallots, chopped
2 T fresh basil, chopped
1/4 cup fresh parsley, chopped
1/2 cup oat bran
1/4 cup egg white substitute or 1 egg
2 T Parmesan cheese, finely grated
1 t red pepper flakes
1 t salt
Mix all ingredients with your hands careful not to handle too much. Form about 36 1 1/2-inch meatballs and bake at 400 for 15 minutes.
