Oat Bran Pancakes
Earlier I talked about the importance of Oat Bran in your diet and the best way to use it. I love grinding it down to a flour-like substance in my coffee grinder so I can recreate some of the things I’ve been missing since I started my diet. These pancakes are delicious with flavored nonfat yogurt or spiced cottage cheese.
OAT BRAN PANCAKES RECIPE
2 T Oat Bran
1 T nonfat cream cheese
1 egg or 1/4 cup egg whites
1/4 t cinnamon
1/2 t Splenda®
Whisk all ingredients together. If batter is too thick, add a little water. Spray a skillet with cooking spray and divide batter in half, to make 2 pancakes. I had mine with Banana nonfat yogurt. I also top them with a half cup of lowfat cottage cheese or sour cream, sweetened with a teaspoon of Splenda® and a dash of cinnamon.

These are great ! Thanks…I was having a hard time with the oat bran, no matter what I made, I didn’t like it. I love these. I make them into little half-dollar shapes and I dip them into sugar free maple and strawberry syrup.
i had a hard time with it too. these definitely make it palatable. but if you search for oat bran on the site you’ll see lots of things to hide it in too. meatballs, breadcrumbs, and the flatbread is REALLY good! good luck!

These pancakes are great! I made a batch with your recipe, but then decided to try a small modification – I replaced the cream cheese and cinnamon with a T of flavoured yogurt and 1/8 t of backing powder. Yum!
