All the classic nacho ingredients stuffed into a pepper! Ground meat, salsa, onion and those awesome nacho jalapeno slices! Add some american cheese slices and you have an incredible tasting stuffed pepper that satisfies any nacho craving! And who can resist eating off these plates! NACHO STUFFED BELL PEPPERS2 red bell peppers, tops removed and seeded
1/2 lb ground sirloin
1/4-1/2 cup pickled jalapeno slices
1/2 small red onion, chopped
1/2 cup medium salsa
1 chipotle pepper, chopped
1 T dried oregano
1/4 cup oat bran
2 slices fat free cheddar, chopped (the cheese melts great like nacho cheese!)
salsa, for serving
fat free sour cream, for serving
Brown the ground meat and onion in a skillet until meat is done, about 5 minutes. Mix the rest of the ingredients together in a small bowl, drain the meat, and add it to the bowl. Mix well and stuff the two bell peppers with the meat mixture. Place peppers in a casserole dish with 1/8 of an inch of water on the bottom. Bake at 350 for 30 minutes. Serve with a little extra salsa and fat free sour cream.
