It may not be a lot to look at but it was incredibly fabulous. In fact, I wish I was having it again tonight! I found these mini hamburger patties at Trader Joes and the cheese was Weight Watchers smoked mozzarella string cheese. I highly suggest searching it out. And kale is by far my most favorite green. Delicious with a bit of Jane’s Crazy Mixed Up Salt. Try finding that too–it’s way lower in sodium than regular salt and it has fabulous flavor. I put it on the burgers before I cooked them in my favorite pan. My cast iron skillet. It was a night of favorites for me. The salt has a surprising light amount of sodium next to table salt and has incredible flavor! Skip the kale if you’re on a PP day!
MINI CHEESEBURGERS WITH SAUTEED KALE
1 package of mini burgers from Trader Joe’s or 1/2 lb ground sirloin made into 6 small patties
1 Weight Watchers smoked mozzarella string cheese, pulled into strings and halved
1/4 small sweet onion, thinly sliced
1 bag or 2 cups fresh kale, tough ribs removed and chopped
Jane’s Crazy Mixed Up Salt
Brown the patties in a cast iron skillet, once you flip them, place the cheese on top of them. Meanwhile, saute your kale in a frying pan and season all of it with Jane’s salt. It has garlic and onion powder and it’s really fabulous. Try to find it at the market!!
