I was really hungry this morning. So while I was baking my whole wheat oatmeal cookies (oops) I told myself I better eat something healthy before they come out of the oven! It was a bit spicy; I left every seed in that chili pepper! But at least I’m not going to be eating a dozen cookies now!
2 T small red onion, finely chopped
2 T red bell pepper, finely chopped
3/4 cup egg white substitute, or 3 eggs
1 small tomato, chopped
2 T cilantro, chopped
2 T fat free sour cream
Warm a skillet and spray it with a bit of cooking spray. Add the chili, red pepper and onion and saute for 4 minutes.Add a bit more cooking spray and pour in the eggs. Let the eggs set; it could take up to 5 minutes. Then flip half of the disc over the other half to form an omelette. Serve with chopped tomato, cilantro and sour cream.
