Melynda’s Baked Salmon Dijon
Melynda’s salmon recipe was also delicious! There were no leftovers that night of any dish and everyone was wanting more. This recipe was especially simple and in 20 minutes you have a delicious fish dinner with very little effort. Definitely make this recipe!
BAKED SALMON DIJON
1 cup fat free sour cream
2 t dried dill
3 T green onions, finely chopped
2 T Dijon mustard
2 T lemon juice
1 1/2 lb salmon filet with skin, cut in center, or individual filets
1/2 t garlic powder
1/2 t pepper
cooking spray, as needed
Preheat oven to 400º F. Whisk sour cream, dill, green onions, lemon juice, and Dijon mustard together in large bowl until well blended. Spray baking sheet with cooking spray. Place salmon, skin side down on baking sheet. Sprinkle with garlic powder and pepper, then spread with sauce. Bake salmon until opaque in center, or about 20 minutes. For best results, do not over bake.
Tip: On PV days serve with steamed broccoli or grilled asparagus
