These make fabulous meatballs for a protein day too! But stuffing them in a mushroom was incredibly delicious.
MEATBALL STUFFED MUSHROOMS
1 lb ground turkey
1 egg, mixed with a fork
1/4 cup oat bran
1/2 cup fat free cottage cheese
2 T tomato paste
2 T Parmesan cheese
1/2 cup fat free mozzarella
1/4 cup fresh basil, chopped
salt and pepper
15 medium mushrooms, stems removed
In a bowl, mix the first 8 ingredients, careful not to handle too much. Season with salt and pepper. Spoon 2 tablespoons of meat mixture, into the mushrooms. If you have leftover you can always just make extra meatballs for lunch tomorrow! Bake at 425 for 20-25 minutes.
Serves 4 (with leftover meatballs for next days lunch!)
