Mary Ann Galvin Anderson’s Moroccan Beef Skewers and Turkey Meatballs!!
Mary Ann posted the skewers recipe on Facebook and I thought they deserved their own page! Immortalized! Thanks Mary Ann, for sharing this with all of us! I made turkey meatballs with her recipe that also turned out delicious! Either way, the spices in this recipe are what make the dish so tasty!
MARY ANN GALVIN ANDERSON’S MOROCCAN BEEF SKEWERS
What you need:
2 lbs ground sirloin
1/2 medium onion, chopped
2 minced garlic cloves
1 T chopped parsley
1 T chopped cilantro
1 t paprika
1 t cumin
1/2 t black pepper
1/2 t cayenne pepper
Wood skewers (soak in water so they don’t burn)
1. Combine the beef, onion, garlic, parsley, cilantro, & spices in a large bowl, refrigerate for 1 hour.
2. Gently pack small amounts of the meat mixture around the skewers.
3. Grill on BBQ turning kebabs making sure to cook evenly.
She made a dip with chopped cucumber, FF sour cream and FF plain yogurt and some vinegar, dill and pepper. Don’t worry about measuring anything, just kinda judge the amounts.
MINI MOROCCAN TURKEY MEATBALLS
So, I had turkey in the fridge thawing today and I didn’t have an onion. I just want to make something really clear to everyone. You don’t have to follow a recipe exactly as it’s written–you can alter it to your tastes and to what you have on hand. I took Mary Ann’s great idea and made it work for what I had in my fridge and my garden today. It just happened that my chives and shallots had so many greens on them I came up with a half an onion’s worth. And I love cilantro and parsley so much so I added lots since I have parsley growing crazy in my garden. I even got my daily oat bran into them! Mary Ann’s idea of having lots of meatballs on hand for snacks was so awesome I took her skewer idea and made snacks for myself. Sad thing is that I didn’t have 2 pounds of turkey and these meatballs are going to only last me probably through tomorrow at lunch!! Thanks again, Mary Ann, for sharing this recipe.
1 1/4 lbs ground turkey
4 T oat bran
1/2 cup shallot and onion greens, chopped
3 minced garlic cloves
1/4 cup chopped parsley
1/4 cup chopped cilantro
1 t smoked paprika
1/2 t ancho chili powder
1/2 t cumin
1/2 t black pepper
1/2 t cayenne pepper
1 t salt
Mix all ingredients together with your hands and form 30 mini meatballs. Bake at 400 for 15 minutes.
I had fat free greek yogurt on hand so I added a bunch of parsley, salt and pepper, and lemon zest. Yum!
