This sauce was spicy and sweet and delicious. I think I’ve only cooked 2 pork tenderloins previous to this diet. Now I love them. They cook really fast and they’re really good. And you can virtually season them with anything!
MAPLE CHIPOTLE PORK TENDERLOIN
2 chipotle peppers, chopped fine with 1 T adobo sauce
1/4 cup sugar free maple syrup
1 t paprika (I used Hungarian sharp)
1/2 t garlic powder
1/4 t chipotle chili powder
1 t kosher salt
fresh ground pepper
olive oil spray
1 pork tenderloin
Mix the chipotle peppers and maple syrup and set aside. Heat broiler. Spray tenderloin with olive oil and season the outside with all the spices. Place tenderloin on a shallow dish and broil, turning only once, 5 minutes a side. Brush on half the syrup mixture and baste and broil another 3 minutes a side. Let rest for 5 minutes and serve with remaining sauce.
