Leftover Chicken and Onion Scramble
Well, this was breakfast yesterday and I sure wish I had it this morning! Just a simple post to remind you of what to do with all that leftover barbecue you have in your fridge. I know if I were at home right now, instead of work, I’d be having a little steak and egg whites. Mmmmmm. I guess I’ll go for that yogurt I have back in the fridge. Bummer. There are so many sweet onion varieties out now and I only cooked these for a few minutes so they had a little bite in them. With the barbecued smoky chicken I had leftover, this was a delicious dish.
LEFTOVER CHICKEN AND ONION SCRAMBLE
1/2 cup shredded chicken (i had leftovers from my bbq yesterday but rotisserie chicken would work too!)
1 small onion, 1/4-inch slices
1/4 cup low or fat free mozzarella
3/4 cup egg whites
1/2 t hot paprika
salt and pepper
Cook onion in a skillet sprayed with a bit of olive oil spray for five minutes. Add the chicken and season the chicken and onion with paprika, salt and pepper. Add the egg whites and cook until they are done, adding in the cheese in the last couple of minutes.
