Sticky Chicken

Laury Kossoff, a follower on Facebook posted this the other day.  It sounded so good that I had to make it.  And it was delicious–Tom and I ate the entire recipe–well, at least I only cooked half of the recipe below!  Thanks Laury, and enjoy everyone!

STICKY CHICKEN

2 lbs skinless, boneless chicken breasts or chicken tenders
1/2 cup oat bran, ground into flour
1/3 cup Brown Sugar Splenda or 4 t Splenda
1 t garlic salt
1/2 t Ginger powder
1 t Paprika
1/4 cup Soy sauce
1/2 cup Water
1 T Worcestershire Sauce

Slice chicken into thick strips. Dry on paper towels. Mix ground oat bran, garlic salt, paprika and ginger. Coat chicken and place in skillet sprayed with Pam. Brown chicken. Place into casserole dish.
Combine brown sugar, water, Worcestershire sauce and soy sauce in saucepan and stir over low heat until sugar dissolves. Pour over chicken. Bake at 350 degrees for 25 minutes.  Baste a few times while cooking.  Turn the oven to broil and cook for 5 more minutes, basting halfway through.

    I had a quick question about the ingredients: In the 3rd sentence of the directions, you mentioned that we should mix flour, garlic salt, etc — but flour isn’t mentioned in the ingredient list.

    Thus, I was wondering if flour is one of the ingredients — and if yes, how much (and what kind) should we use?

    that confused me too. i just posted her recipe the way she sent it but i think i’ll change it. she grinds her oat bran to flour and then calls it that. i’ll fix it now. you should try them, they are delicious!!

    I used 6 skinless chicken thighs. I omitted the “flour” and sprinkled the spices on wax paper and coated the chicken then I sprayed a non stick pan with Pam and sauteed them then placed them in a casserole dish. I made the sauce as is and poured over the thighs and baked for about 1/2 hr, basting a few times. Delicious!

    I made the oat bran flour wrap today. I found it even better than the ones you buy! I will be making these and freezing them to have on hand! Very good!
