Another simple sauce/marinade to switch up the flavors of the meat. I know that Jerk sauce has lime and spices so this is what I made my Jerk marinade with. It’s probably not traditional but it’s what I had in the cupboard. You can use any of your favorite spices, the meat was really flavorful with only 30 minutes to wait.
JAMAICAN JERK PORK CHOPS
4 center cut pork chops
1/2 small onion, chopped
2 T lime juice
1 t red pepper flakes
1/2 t salt
1/4 t allspice
1/4 t curry powder (I used Vindaloo Powder from Penzey’s)
a small piece of fresh ginger, rough chopped
2 cloves garlic, rough chopped
Combine all ingredients in a blender until smooth. Pour sauce over pork chops and place in the refrigerator, covered, for 30 minutes. Grill or cook in a grill pan til 160 degrees, about 6 minutes on the first side and 4-5 on the other, depending on how thick the meat is.
