Italian Chicken Pasta Bake
So, I had leftover chicken from yesterday’s Garlic-Basil Chicken so what better to make then a one-pot wonder! I dotted the dish with tomatoes but you can easily leave them out, pick them out, or add other veggies, depending on what kind of day you’re having! Either way, this is a perfectly PP dish without any veggies, if you choose, all Dukan-friendly. I highly suggest if you’re in Stabilization, a wonderful addition would be artichoke hearts!!
ITALIAN CHICKEN PASTA BAKE
1 7 oz package Shirataki angel hair noodles, chopped (substitute 2 cups cooked whole wheat pasta if in Stabilization)
1 cup cooked chicken, cubed
1/2 cup grape tomatoes, halved
2 light string cheeses, cubed
2/3-3/4 cup fat free cottage cheese
fresh or dried basil
1 garlic clove, minced
salt and red pepper flakes
2 T Parmesan cheese, shredded
Mix all ingredients together in a bowl, down to the Parmesan. Pour into a small casserole dish and top with Parmesan. Bake at 375 for 30-35 minutes. Let set 15 minutes. Enjoy!!
