As you saw in a recent post, I have fallen in love with the spices I found at Pereg spices! Well, I received my box of spices and last night I had the most amazing meal. I made the most amazing meatballs and prepared couscous for Tom, and I ate mine with some vegetables. But I didn’t miss the couscous at all (although he did say it was fabulous!).
1 lb ground turkey
1/3 cup Pistachio Spice Mix (I picked the pistachios out–or you could use the onion one!)
1 egg, beaten with fork
1/4 cup oat bran
1 t Hot Paprika
1/2 cup fat free cottage cheese
2 t Harisa
Mix the first 6 ingredients in large bowl, careful not to handle too much. Form 16-20 medium meatballs and place on a foil-lined cookie sheet, sprayed with a bit of cooking spray. Bake at 400 for 15 minutes. Remove from oven and top each meatball with a tiny bit of Harisa, then continue to bake for another 10-15 minutes.
I served mine over Vegetable Couscous for Tom and I had mine with steamed spinach. I would highly suggest these products and I did find a lot of them on Amazon!! Try the Quinoa if you’re in Stabilization. It’s a super-nutritious side-dish full of good carbs and fiber.
