Ham and Broccoli Quiche
Delicious. I ate almost half of it. Oh well, it was a light eating day for me and I was starving!! I used a few less egg yolks in mine so I didn’t have to feel so guilty about the fat content. It was perfect for a warm evening. I let it cool a bit and ate it at room temp. Too bad I didn’t leave a little for lunch today!! Tom loved it too.
HAM AND BROCCOLI QUICHE
4 whole eggs
4 egg whites
1/4 cup skim milk
season to taste (I used salt, pepper, a sprinkle of paprika, ancho chili powder, cayenne pepper and a few red pepper flakes)
6 oz turkey or low sodium ham, cut into ribbons
2 cups broccoli, steamed and chopped
2 T Parmesan cheese, finely shredded
Whisk the first 4 ingredients together in a large bowl. Pour into a glass pie dish or tart pan sprayed with a bit of cooking spray. Press the ham into the eggs, then the broccoli. Top with Parmesan and bake at 375 for 25-30 minutes.
