Super simple and super delicious. I had fresh vegetables delivered this morning so I had to dig into the box tonight. Delish.
GROUND TURKEY AND CABBAGE
1 lb ground turkey
1 head red or green cabbage, cored and sliced
1 onion, sliced
2 carrots, thinly sliced
salt and pepper
Shirataki noodles or a whole grain substitute or scrambled egg whites
Saute onion and cabbage in a large skillet, preferably cast iron. It could take 20-30 minutes depending on how thin you sliced your cabbage. Green will take a little less time. Add the carrot and turkey and cook done. Season with salt and pepper, cayenne and a little cumin. I served mine with some red whole grain rice. I also put a bit of fat free sour cream on it–made it a real German dish like my Grandma used to make. It would delicious with a bit of low sodium soy sauce over a bed of Shirataki noodles or egg white scramble and hot sauce!
