Greek Turkey Burgers with Cucumber Yogurt Sauce

So, Frankie had to go to the vet yesterday morning. We woke up and he was screaming all morning, poor thing. So, of course, what was I going to do while I waited to hear? Keep myself busy in the kitchen. So, this was Tom and I’s breakfast yesterday morning. Not too traditional, but incredibly flavorful and very satisfying. And Frankie had a tooth pulled and all is well! Happy Sunday to everyone. These burgers had so much flavor–give them a try!!
GREEK TURKEY BURGERS
1/2 lb ground turkey
2 T red onion, chopped
2 T red bell pepper, chopped
2 T fresh parsley, chopped
1 t lemon zest
1/4 t pepper
1/4 t salt
1/4 t garlic powder
2 t goat or feta cheese
Mix all ingredients using your hands, trying not to handle too much. Divide turkey in half and form two balls. Punch in the center of each ball and add a teaspoon of cheese in the center, folding the ends of the burger to the center to lock in the cheese.
Flatten each burger and cook in a skillet sprayed with a bit of cooking spray, 5 minutes per side, or until fully cooked. Serve with yogurt sauce.
CUCUMBER YOGURT SAUCE
3 oz fat free Greek yogurt
2 T cucumber, peeled and seeded, chopped
1 t red onion, chopped
1 t red bell pepper, chopped
1 t fresh parsley, chopped
pinch of salt, pepper and garlic powder
Mix all ingredients well and refrigerate til ready to use.
