Goat Cheese and Sun-Dried Tomato Stuffed Mini Peppers
Tom and I had a lot of chores to do today so after we got back from Trader Joes, the nursery, and the hardware store I thought it would be fun to tailgate. Literally. So I grilled low fat chicken sausages and stuffed mini peppers with goat cheese and sun-dried tomatoes.
I found a goat cheese at Trader Joe’s that’s only 3.5 grams of fat per two tablespoons. And for me, that’s a lot of goat cheese. It doesn’t take much cheese to get a very powerful cheese punch. Tom had to work on his new truck today and I had to do a lot of gardening. I prepared, cooked and ate lunch outside. I felt as though we were camping. Anyway, just a simple recipe for a perfect summer day.
GOAT CHEESE AND SUN-DRIED TOMATO STUFFED MINI PEPPERS
6 mini sweet peppers
2 T low fat goat cheese
2 T sun-dried tomatoes
I stuffed half the pepper full of cheese then the tomatoes and finished with a bit more cheese. I tried not to cut the top of the peppers off so I wouldn’t lose any of the filling on the barbecue. The peppers were awesome with the sausages. And what a perfect tailgating meal.
