So, while Tom’s away throwing his buddy a bachelor party, I’ve invited the girls over. And anyone on the Dukan Diet knows that the symbol to the left is not a good thing. But don’t you have to fall off the wagon sometimes? I really try but come on, one small lapse? OK, well, maybe I’ve had a few but I’ve really tried!! It’s a lot better than polishing off an entire bottle of Pinot Noir myself, eh?
SAUSAGE AND PEPPERONI OAT BRAN PIZZA RECIPE
1 packet of rapid rise active yeast
1/4 cup warm water
1/4 cup of oat bran, ground in a coffee grinder to flour consistency
a pinch of salt
1/2 t olive oil
1/2 cup skim milk mozarella, shredded
2 T finely grated parmesan cheese
1/4 cup tomato paste
1/8-1/4 cup water
1/2 t oregano
7 slices 70% less fat pepperoni
1/4 cup italian turkey sausage, browned and crumbled
salt and pepper
olive oil spray
Activate the yeast in the warm water. In a double boiler over simmering water, add yeast to the flour, salt and olive oil, slowly, until a very sticky ball of dough forms. Spray a glass bowl with olive oil spray, place the dough in the bowl, cover with a kitchen towel and let rise in a warm place for an hour. The dough will not rise much but it will lose it’s stickiness and become much easier to handle. Mix the tomato paste, water and oregano and season with salt and pepper.
Sprinkle some oat bran on a cutting board and roll out the dough until it’s cracker-thin (should be about a 7-inch circle). Place on a pizza stone or cookie sheet and bake at 425 for five minutes. Remove the crust and turn the temperature up to 450. Spread the tomato paste on the crust followed by half the mozzarella, sausage, pepperoni, the rest of the mozzarella and finish with the Parmesan. Bake 10 minutes and remove from oven. Sprinkle with red pepper flakes.
CHICKEN FINGERS RECIPE
1 lb chicken tenders
1/4 cup egg whites
1/4 cup Parmesan cheese, the kind in the tin can
1/4 Oat Bran breadcrumbs
1 t salt
Pour the egg whites into a shallow bowl. Put cheese, breadcrumbs, salt and pepper into a quart-sized sealable bag. Dip each tender in the egg then toss it in the breadcrumb mixture. Place on a foiled-lined cookie sheet sprayed with a bit of olive oil spray. Bake at 375 for 15 minutes, the last few directly under the broiler.
BACON MAC N CHEESE BITES RECIPE
2 packages of Tofu Shirataki Macaroni noodles
1/4 cup egg whites
1/2 cup low-fat ricotta cheese
1/4 cup light sour cream
1 cup 2% shredded smoked cheddar
1/4 real bacon bits
1/2 t hot sauce
1/2 t dry mustard
1/2 t salt
2 T Gruyere cheese, finely shredded
2 T Oat Bran breadcrumbs
Rinse and drain the noodles well. In a bowl, mix the egg, ricotta, cheddar, sour cream, hot sauce, mustard and season with salt and pepper. Carefully mix in the bacon and noodles. Pour into mini silicon muffin cup. Sprinkle the top with breadcrumbs and then Gruyere and bake for 25 minutes at 350. I turned the broiler on for the last 5 minutes to get the top nice and brown.
MUSCATO SPRITZERS RECIPE
1 750ml bottle of Muscato wine
1 2-litre bottle of diet 7-up
Mix together and enjoy.
