“Fried” “Rice”
So, I’m not sure this would satisfy my craving for rice but I definitely would make it again. It’s a great filler for zucchini or peppers and it’s really good on it’s own. I’m going to try making the cauliflower pizza I’ve been reading about online today and post that later this afternoon!
FRIED RICE
1 head of cauliflower, cut into large chunks
3 oz Wellshire Farms turkey kielbasa, small cubed
2 T green onion, finely chopped
2 T red bell pepper, finely chopped
1 egg, mixed well with a fork, or 1/4 cup egg whites
2 T soy sauce
olive oil spray
Steam cauliflower 3 minutes in the microwave and then process it in a food processor until it resembles rice. Set aside. In a skillet saute kielbasa and pepper in a bit of olive oil spray for five minutes. Add the cauliflower, then egg and soy and stir fast, until the egg is cooked throughout. Add the green onion and season with fresh pepper.

That’s interesting. When I make the rice I pulse it in the food processor until it is the size of rice before I cook it in the microwave. I’ll give your way a try next time.
I haven’t tried it that way yet but this way I could press some of the water out when i processed it.
