It’s been a year since the book was released and I want to thank everyone who bought it already! I’m writing the next one (99 Meatballs!) and hope to get it out soon! Til then, I figured I’d give you an idea of what was in the last book and what to look forward to. It’s still on sale on amazon and on the createspace.com website. See the link at the top right of this page! This was one of the egg recipes featured in the book. Hope you enjoy it. It’s simple but the book points out that with just changing a few ingredients, you don’t have to have the same thing every day! It’s easy and there’s never any reason to get bored with the food you’re eating. This diet is simple if you keep the food interesting and always changing.
FILET MIGNON SCRAMBLE (ATTACK)
2 cups egg white substitute (or 8 eggs)
1/4 cup fat free milk
salt and pepper
1 8 oz filet mignon
1/4 cup chives, chopped
1/2 cup fat free sour cream
Cook the filet in a sauté pan for 5 minutes on each side. Set aside to cool and slice. Add the egg mixture and cook on low heat for about 5 minutes, adding the meat in the last minute. Serve with chives and sour cream.
