While I said I was going to move on and not post anymore recipes for muffins, I made these last night and they were wonderful. Yes, I am in Consolidation so I can have fruit again, so this is for all you out there that are in Consolidation and Stabilization that just have to continue to get their daily fix of oat bran. Remember, everyone, this is something that Dr. Dukan wants you to get fixed in your diet for the rest of your life! These were delicious! The apple makes them incredibly moist.
ENGLISH TOFFEE APPLE MUFFINS
9 T of oat bran
1 t baking powder
1/2 T baking soda
2 t Splenda (I use 2 T Brown Sugar Blend)
2 T sugarfree vanilla pudding mix
1 t cinnamon
1 t vanilla
2 T lowfat buttermilk
3-4 T finely chopped apple, I used a pink Pink Lady
2 t sugarfree Torani English Toffee syrup
Mix all the dry ingredients in a bowl. Add the extract, syrup, buttermilk and eggs and whisk until smooth. Add the apples. Divide the mixture equally between 12 mini muffins in a tin sprayed with olive oil spray
Bake in a preheated oven at 350 degrees for 12-15 minutes.
