Every dish that was prepared last night was a definite winner. Everyone LOVED this dish. Thank you so much Elvira, for entering the contest. Although you didn’t win, I hope that doesn’t stop you from entering contests in the future. When I say this competition was close, I’m not exaggerating!
ELVIRA’S SHRIMP CHOW MEIN
2 packages Tofu Shirataki Spaghetti Noodles
1/2 onion, cut into thin slices
2 cloves garlic, minced
1 8 oz package of mushrooms, sliced
2 cups stir fry vegetables or broccoli florets
1/4 cup low sodium soy sauce
1/2 t chili paste (optional)
1 lb shrimp, peeled and deveined
Drain the shirataki noodles and boil for 5 minutes with salt. Drain the noodles and put in non stick pan with about 2 tablespoons low sodium soy sauce and fry until the noodles are an even light brown/tan color. Saute the vegetables in a bit of olive oil spray and half the soy sauce. When vegetables are done, add into the pasta.adding the rest of the soy sauce, as needed. Add the shrimp and garlic and cook just until the shrimp is pink, about 3-5 minutes. Season with chili paste, if using. Enjoy!! Feel free to add in any other veggies, tofu, or spices.

The dish was really good and if it would have been in the rule book most judges wanted to rate this higher as the dish tends to draw you back for more long after you had it. It’s a good one.
we didn’t allow anyone to go back and change their votes but i really wanted elvira to know that EVERYONE wanted to!

i can imagine that everyone does! i doubled the recipe for the contest and i still didn’t have enough. thanks for entering. it made it so much fun to have people particpate. i’m going to do another one for sure!
