So, both Tom and I grew up in Seattle so it shouldn’t be much of a surprise that we are HUGE 12th man, Seattle Seahawks fans. LA doesn’t have a team, and even though that might change, we’ll never be fans. I think if you grew up in Seattle you’d completely understand why. You’d also understand why we’re still upset about the game. But we love them and can’t wait for next season!!
So, naturally, after winning last year, we had to do it up right, this year. I planned our get-together for a week. I wanted EVERYTHING to scream Seattle and The Pacific Northwest. I think our guests would agree that we accomplished that.
I ordered my seafood from Santa Monica Seafood, a place that needs to be visited by anyone in the Los Angeles area. It’s simply fabulous. They get shipments of seafood twice a day. FRESH. And I’m a picky seafood eater. I grew up with fresh fish so most places in the LA area I just won’t eat or buy fish from.
But theirs is fantastic, almost as fresh as Pike Place Market in downtown Seattle.
At any rate, I served a bunch of seafood yesterday and it was a great time. I got King Crab legs, made crab cakes, shrimp cocktail and for everyone else, I made Beecher’s “World’s Best” Mac & Cheese. Beecher’s is this fabulous place in Seattle and New York city that makes these fabulous little cheese curds.
Home Base – Seattle’s Pike Place Market
In 2002, having become firmly entrenched in the Seattle food scene, Kurt was walking through Seattle’s historic Pike Place Market and noticed that a long-time tennant had closed up shop. Inspired, he called the landlord, returned to his office and announced they were going into the cheesemaking business. With fond memories of his grandfather and his wheels of Stilton, it was a natural fit to name the business Beecher’s Handmade Cheese. keep reading…
King Crab Legs
All I did was let them thaw in the refrigerator overnight and bake them at 350 for 8-10 minutes. I didn’t even serve butter with them, they were fabulous and didn’t need it. I figured everyone could follow the Dukan Diet as close as possible!!
I got some huge clam shells from SM Seafood, bought 1/2 lb of clams and steamed them. Then I added an egg and a couple tablespoons of oat bran, some finely chopped onion and a few tablespoons of Parmesan cheese. Baked them at 350 for about 15 minutes after I stuffed the huge shells. They were fabulous!!
Super simple and perfect for game day. I used sugar free ketchup, lemon and horseradish for the cocktail sauce. It was spicy and wonderful.
2015 GO HAWKS!!
