So, after 6 days, not down a pound. Seriously. I have to admit, I’m not exactly thrilled with the diet. But I know it’s not the diet’s fault, I got hormone issues, and they’re not cooperating. So, I’m moving forward, on the diet, on to Cruise. My first night was last night, and I really appreciated the vegetables. The dish was delish!! Finally a Dukan Diet recipe that wasn’t a big chunk o’ meat!! I hope you all enjoy it.
2 small zucchinis, cubed
1/2 lb ground turkey
1/2 lb ground sirloin
1 8 oz package button mushrooms, halved
1 8 oz can Italian-style diced tomatoes
1 small onion, diced
1 clove garlic, crushed
1 1/2 cups fat free cottage cheese
8 oz low or fat free mozzarella cheese, shredded
2 T Parmesan cheese, grated
In a large pan, add the ground meat, onion and garlic, and season with salt and pepper. Cook until the meat is done, about 8 minutes. While that is cooking, beat together the cottage cheese and egg. Once the meat is done, remove it from the pan and add the zucchini and mushrooms and brown for 5-6 minutes. Add the tomatoes and simmer for another 10 minutes. Season with salt and pepper.
Spray a square baking pan with cooking spray. Layer half of the each: meat, then vegetables, cottage cheese mixture and then mozzarella. Repeat and sprinkle with the Parmesan cheese. Bake at 375 for 40-45 minutes. Let set at least 15 minutes before serving.
